Slow Cooker: Italian Turkey Stew

My Italian turkey stew is a healthy and hearty recipe made with lean ground turkey, fresh vegetables, and Italian herbs. It is delightfully simple to execute without compromising flavor. It’s a dish that equally good for a family meal or to freeze and reheat later.


Ingredients

  • 1 lb. lean ground turkey
  • 3 cups sliced yellow onions
  • 1 sliced orange/yellow bell pepper
  • 4 tbsp tomato paste/puree
  • 28 oz tinned diced tomatoes
  • 2 cups of turkey bouillon
  • 2 tbsp garlic powder
  • 4 tbsp dried Italian herbs


Method

  1. Cook the lean ground turkey until browned
  2. Slice the onions and the pepper
  3. Combine all the ingredients in the slow cooker
  4. Cook for 2 hours
  5. Serve



Serving Suggestions

I served my Italian turkey stew with homemade mashed potatoes. Other options are pasta, rice, or a baked potato. If you seek a low-carb meal, you can easily have a double portion and eat it by itself.

I set out to make a meat sauce of sorts and ended up with something far better. I can’t fault this recipe when I combine ease, flavor, and cost. Therefore, It was easy for me to give this a Callie Review of 5/5.

The flavor in this dish comes mostly from the herbs, but don’t skimp on the garlic powder! This dish is easily adaptable as a soup. To do so, double the canned tomatoes and bouillon. That’s my plan come the winter!
