An easy, all-in-one meal that uses the couscous-like pasta. The combination of green curry paste and curry powder creates a flavor that will have your taste buds excited. Have it tonight or next week – as this dish freezes and reheats well.
Ingredients
- 1 lb. skinless chicken breast, cubed
- 2 cups/16 oz Acini di Pepe
- 2 cups shredded carrots
- 2 zucchinis, sliced
- 2 yellow squash, diced
- 14 celery sticks, sliced
- 4 cups/32 fl oz chicken bouillon
- 2 tsp green curry paste
- 2 tbsp curry powder
- 2 tbsp garlic powder
Method

- Dice the chicken and vegetables
- Mix together all ingredients, except the Acini di Pepe, in the slow cooker
- Cook for 2 hours
- Add in the Acini di Pepe
- Cook for 30 minutes
- Serve
Serving Suggestions

I designed this dish to act as an all-in-one dish. However, you could serve this cold with a beautiful green salad. The curry taste is strong, so it should be paired with items with a subtle flavor.

When you are prepping the dish – go light on the green curry paste initially. It’s easier to add more than it is to cool down an overly-spiced dish. Green curry paste is potent for many pallets.
